Monday: Pizza night with friends
Tuesday: Spaghetti with Autumn Pasta sauce and garlic bread
Wednesday: Lentils, Rice, and Crispy Onions (Mujaddara) (From ATK Vegetarian cookbook)
Thursday: Baked beans and Honey Wheat Rolls
Our friends invited us to have pizza with them this Monday, we went to Mama's Pizza. We had never been before - we LOVED it. The crust was perfect (we got the Neapolitan style). We also got spicy wings and they were really good. We ended the evening with cannoli. I had tried cannoli two or three times before and always hated it and never understood why people liked it, but this cannolo (singular) changed my life. I have been wanting it ever since. Do recommend.
Tuesday night I was really tired so Erik made spaghetti. We used whole wheat noodles and jarred (!!!) pasta sauce. Trader Joe's sells pasta sauce during the Fall that has pumpkin in it and I love it. We had that with garlic bread. It was good and quick and easy.
The baked beans we had were super delicious. I love that recipe for Honey Wheat Rolls from SugarSpun Run. Super tasty. For some reasons my beans took FOREVER to cook. I made them from dry beans, soaked overnight, and then cooked them in the crockpot with a chunk of fatty bacon. Once they were soft (again, took forever) I added in some dijon mustard, ketchup, molasses, onion powder, garlic, and cayenne. I let that simmer until it was a thick sauce. Delicious.
I did not love the recipe from the ATK cookbook this week. Part of that was my fault, I didn't get the onions off the heat fast enough so they got too charred. Part of that was the fact that the recipe called for a LOT of cumin. I thought it would be okay, but neither E nor I like cumin. The texture of the rice with the lentils (and the yogurt sauce on top) was really good. I would consider making this again minus the cumin and with onions that I didn't burn.
