I made veggie pot pie. It was not delicious, but it had a lot of potential. I will try the recipe again with some adjustments. I made it by sauteing some onion in some butter, then I added veggie broth, seasonings, and a bag of frozen mixed vegetables (corn, peas, green beans, and carrots). I brought that to a boil and then mixed in some cornstarch whisked into milk. It thickened and I made the biscuits with a biscuit mix from Nuts.com, mixed with milk (1:1 ratio), 2 tablespoons of melted butter, 1 tsp each of onion and garlic powder, and about 1 1/2 cups of shredded sharp cheddar cheese. I plopped spoonfuls of that on top of the veggie soup mix and then baked it at 350 for 45 minutes. The biscuits were good, but didn't cook all the way through. And the soup was WAY too salty. I think I would make it without any salt in the soup or biscuits and let the broth do that.
On Tuesday I ate my Thanksgiving bread as a PB&J. While the texture is pretty good, it just doesn't taste like bread. E had a leftover sandwich from lunch.
Wednesday, E took the GRE and did a great job so we celebrated by going to Costa Vida and Bahama Bucks. We love those two places.
On Thursday I woke up with a cold so I didn't cook at all. We had leftovers for dinner and I slept like 18 hours.
Friday I was still a little under the weather. I made German Pancakes for lunch and then E took me to Calle Tepa - a Mexican grill. I got the "Manchegos" which were like caramelos or sincronizadas (or quesadillas) made with Manchego (sheep) cheese. I got one with pollo asado and one with carne asada. They were really good. E got an enchilada style burrito and loved the enchilada sauce. We both thought the salsa was pretty good, but not the best. We definitely would recommend this restaurant.
