I have been avoiding gluten and wheat for the most part and I have been feeling better. I even had a period where my cramps were totally under control just with Tylenol. I don't know if that was related but that is commonly attributed to GF diets in endo blogs.
I decided to try some spelt and see if it gave me the same reaction (brain fog, nausea, headaches) so I made these spelt muffins!
I didn't make too many substitutions. I made my own pumpkin pie spice (1 1/2 t cinnamon, 1 t ginger, 1/2 t nutmeg, 1/8 t cloves). I also used about 3/8 c of honey and 1/8 c of maple syrup (I love maple and pumpkin together but the syrup is so expensive!). I was craving Costco apple streusel muffins, so the only other change was that I put streusel on top of the muffin batter (this recipe, which I had frozen in the fridge).
The batter was really thick and retained its shape in the oven, so I was glad I had the streusel to hide the not-perfectly-domed-tops.
E and I just went to Ikea this past weekend and I bought silicone muffin cups so this was a perfect recipe to try them out. They took longer to cook than I thought they would. I wonder if that is because of the silicone cups?
Overall, they tasted great and were very moist. I would definitely make them again.
Update:
I made these muffins again. This time, I added 1/4 c of milk to the batter so they weren't so thick. I also cooked them in a mini-muffin pan for about 12 minutes at 350*. And I put chocolate chips on the top of them before I baked them.
Next time I will make these changes and also add an extra 1/4 c of brown sugar. They weren't quite sweet enough.
