Meal Plan: 10/22-10/26

Monday: Sopa de lentejas (approx this recipe but using kielbasa not chorizo)
Tuesday: Cauliflower Biryani (ATK Cookbook)
Wednesday: German Pancakes (approx this recipe but done in a blender)
Thursday: African peanut butter and sweet potato stew (here)
Friday: Leftovers

E recently mentioned that he wants to bring more sandwiches and less leftovers for lunches because he doesn't often have time to heat things up for lunch. Like the loving wife that I am, instead of buying sandwich stuff for lunches this week, I bought him a thermos that should keep his food hot until he can eat it. Ha. I hate throwing away food and eating leftovers for lunch is the easiest way to make sure we throw away as little as possible.

I am in full-Fall over here (in spite of the 80* weather we are having), so I decided to make SOUP. And lots of it this week.

I ended up making the lentil soup on Thursday because I was really craving German pancakes on Monday. They are super easy to make wheat free, I just used a non-wheat all purpose flour mix. I made two batches, one with Krusteaz All Purpose GF Flour Blend and one with Pamela's All Purpose GF Flour Blend. They were both great. Pamela's had a bit more rise to it. We ate the pancakes with a quick berry compote (and E added Nutella on his of course).

The Cauliflower Biryani was from the ATK Vegetarian Cookbook. I hated the first three bites and then grew to really like it. I even had it for lunch the next day and thought it was better. I didn't use the yogurt sauce and I think the Biryani itself would have been fine without the mint. I didn't add any cumin or cilantro because neither E nor I like the flavor. I will probably make this again. I used brown basmati rice, so I had to increase the cooking time (about 35 minutes), but it worked out because Walmart gave me frozen cauliflower instead of fresh so it took extra long to roast.

Unfortunately, the African Peanut Butter and Sweet Potato stew was .. not good. It was very weird. I don't know. It would have been good without the peanut butter, I think. Do not recommend.

The sopa de lentejas was fantastic as always. I like to add about 1/2 cup of extra lentils to make it less brothy. The soup is great for leftovers the next day, too. I didn't add cumin because I don't like it.
