Kladdkaka

Last night we had Matt and Morgan over for Pizza Night (TM).

They brought a tasty Caesar Salad. But then we were left without dessert, which would have been a tragedy after all of the health of a salad.

So I threw together a quick Kladdkaka. I saw an ad for a recipe on Facebook way back when and screenshotted the name and then waited like 6 months to actually make it. But it kept teasing me. Gooey, chocolatey. Sounds like heaven (and it is heavenly).

I have since made it a few times, never using the same recipe, and (until last night) always overcooking it.

The trick is to take it out as soon as the top crust forms. I made mine in a 9x9 glass pan because I couldn't find my pie plate. I tried to turn it out and regretted that. We ate it straight from the oven, so it was a hot mess. Yet delicious.

I used this recipe and followed it pretty much exactly. I did have to cook it for about 30 minutes, checking every 5 minutes for that top crust to form. I also didn't bother dusting it with powdered sugar because when I turned it out of the pan it totally fell apart. So we just ate scoops of it plain. It would have been great with ice cream. It was sort of like a chocolate lava cake, although today the leftovers (one portion) look much more firm.

Only 6 ingredients, all pantry staples. And it is really quick to throw together. This is a great recipe for anyone with a small kitchen and not a lot of time. I sent it to my cousin on her mission and she said she made it several times.
