So our good friends (I like to refer to them as the "parents I chose") have Papa John's pizza every Monday night. We have attended a few times and Erik loves the tradition. He asked if we could start it for our family (since, as he said, "it is only right for us to take the best things from each of our families - including Patti and Chuck - and implement them in our family"). So, we have pizza on Mondays.
Asian Chickpeas/Cauliflower are a Frankenstein's monster of Pinterest recipes. It started as General Tso's Chickpeas; then along came Sticky Sesame Cauliflower. They taste too simliar to me. Seriously. I want a recipe for honey sesame chicken that tastes like it does in the restaurants, but every recipe I have ever found tastes like these two. Either peanutty with soy sauce or like teriyaki. I like that the cauliflower is a vegetable but the chickpeas add some extra protein and a different texture. We eat this with rice (sometimes cauliflower fried rice, sometimes plain rice) or with lo-mein or soba noodles. Erik likes noodles, but I love rice. Usually I make both so we can each get what we like.
Stroganoff (or Cheater's Stroganoff) is super easy and my mom used to make it when I was a kid. We usually serve this with roasted broccoli or brussels sprouts on top of whole wheat egg noodles. I put a LOT of Frank's Hot Sauce on it but Erik eats it plain.
White Girl Tacos are the tacos I grew up eating. Only when I moved to Tucson did I realize how white they really are.
Italian Baked Cauliflower is yet another cauliflower meal. I try not to have too many of those in one week, but it is pretty cheap and really versatile. This is a tasty little meal, but be warned - you'll need more cauliflower than you think. I usually make this with at least 2 heads. One time I made it with a head of purple and a head of white, it was beautiful. I am not sure where I got this recipe. It is easy:
Cut cauliflower into bite size pieces. (I don't use the stems, just the tops.) Then roast it in a hot oven on a sheet cake pan until it is fork tender and starting to brown on the edges. Put it all in a casserole dish and sprinkle italian herbs, salt, and parmesan cheese over it. Cover it with marinara sauce and mozzarella cheese and bake until heated through and the cheese is bubbly. Enjoy with garlic bread and a side salad.
