Tuesday: Red Beans and Rice (from the coolest cookbook - America's Test Kitchen Vegetarian book)
Wednesday: Sweet potato/green rice/ black bean bowl
Sometimes, the meal plan doesn't work out. This week, for example, I was supposed to make butternut squash risotto (another recipe from the ATKV book). I still haven't done that. Almost a month later. Fortunately, the squash is frozen and the rice is dried. So I have time.
I don't remember what we ate from Thursday-Sunday of this week. It is all a blur. This was the last week of my previous job and we had a lot going on.
The Sweet Potato/Green Rice/ Black Bean Bowl is delicious. The recipe I linked to above is a close approximation. I have made it many, many times and we always love it. I believe I found the recipe on Pinterest or maybe in a cook book? It has morphed so many times that I don't use a recipe anymore. We eat it with chips, salsa, and crema (if you can get some crema estilo salvadorena - you will not regret it. I love that stuff). We love the leftovers, we love it fresh, we love it in tacos or bowls or burritos. This is definitely a staple recipe in our house.
