The tacos of my childhood. No matter how I feel, I will always be able to eat a few of these.
Meat:
1/2-1 lb ground beef
Cook with:
1 tsp chili powder
2 tsp onion powder
1 tbsp minced garlic
A few shakes of salt and pepper
Once browned and a little crispy add:
1 can of Van Camps Pork and Beans
1 shredded zucchini
Variations:
- A mixture of cooked lentils/quinoa can be used in place of the ground beef. I cook them both with a lot of garlic, chili powder, and onion powder so the flavor cooks in.
- Can skip the zucchini, but why would you?
Tortillas:
My family soft fries the tortillas in about an inch of oil then layers them in paper towels until it is time to eat. They are so good this way. But I don't like having a pan of oil sitting around so I spray both sides of the tortilla with cooking spray and heat up both sides on a comal. You can also just heat them dry on a comal, but the extra oil really adds something special and delicious.

Smashed avocado
Sour cream or cottage cheese or plain greek yogurt
Franks hot sauce
Cheese (my favorite is a mix of cheddar and Monterrey jack)
Lettuce (usually we just use a spring mix)
