Monday: German Pancakes
Tuesday: Lasagna
Wednesday: Leftover lasagna
Thursday: Garlic Pasta with Roasted Tomatoes
Friday: Leftover lasagna

We had to pause our Monday night pizza tradition for a while. It made our budget for eating out very difficult to follow. We are going to rework it and see what we can do.

The German pancakes are nothing new. We love them. They're super easy and fast.

On Wednesday, I made lasagna. I make it different every time. This week I made it with oven-ready lasagna noodles (I couldn't find whole wheat lasagna noodles, so I just bought the easiest noodles. Usually I like the flavor that the whole wheat noodles add even though I have to add the extra step of boiling them). I layer the noodles with homemade marinara sauce; cottage cheese mixed with 2 eggs, about 1/4 c of Parmesan cheese, and some Italian seasoning; chopped spinach and basil; and a blend of mozzarella and Monterrey jack cheeses. Delicious. I prepped this the night before and then all I had to do was pop it in the oven. We ate it with garlic bread and extra marinara sauce. We had so much leftover we ate it for basically the rest of the week. Which was good, no complaints here.

The Garlic Pasta was good. The recipe is vegan, I did not make it that way. I added some Parmesan cheese and some heavy cream to the sauce, but I did also use some nutritional yeast. I would make this again. I think sun-dried tomatoes would be even better than roasted ones.
