I love white girl tacos. We had E's sister and her fiance over for dinner that night so I made a lot of taco fillings. The leftovers worked great for nachos the next day.
I made this veggie lentil bake and at first I hated it, but then I grew to really like it. E stands firmly in the "hated it" camp. He requested that I never make it again. My one suggestion, however, is that you don't overcook the lentils. I did and they disintegrated completely. We ate it with garlic bread. Again, I liked it. E hated it. It is healthy and easy (maybe not the garlic bread so much, ha ha), so I would say it is worth a shot. E hates bell peppers, so that may have been why he disliked it so much.
This week was rough in terms of cooking. I was just NOT in the mood. We had breakfast for dinner one night, because E realized I hadn't eaten so he took control. Every other night was just a desperate longing for leftovers. I also ate out one night with work.
We had some delicious Mexican food on our date on Saturday. We went to a restaurant downtown called El Charro. I got the mole plate and it was SO good. Do recommend. I hadn't had mole that good since I lived in California. Erik got a birria burrito which was also really good.
