Monday: Homemade pizza (cauliflower crust for me from TJs)
Tuesday: Mac and Cheese (rice noodles)
This week was a mess. I purposely didn't go grocery shopping so that I could use that budget to stock up on wheat free items for myself at Trader Joe's. They have a good selection that is reasonably priced.
We also had a TON of leftovers. I had 2 events at work that I got to bring food home from, plus E's sister got married last weekend and we got an entire box of Italian food from that. I wanted to get rid of all of those things and start fresh the next week.
What I learned, though, is that cauliflower pizza crust tastes like cauliflower (ew) and that the GF Mac and Cheese from Trader Joe's is pretty good but I wish the noodles were smaller.
We went to a GF Bakery on Friday for our date. It was SO good. I had a BLT and a pumpkin roll. Erik had a club sandwich and 2 cookies. We loved all of it. I am excited to have a place I can go and know that everything is wheat free. If you are ever in Tucson, I recommend checking out dedicated.
I can't say enough how strange it is to know that I am allergic to wheat. Of all things. I used to eat wheat all the time. It is the staff of life! How did it get to the point where I can't even eat it now without getting a stomachache and feeling light-headed?
On Thursday night our sister-in-law (and E's brother) came over. They brought me my favorite salsa from a restaurant in Globe, AZ (Guayo's On the Trail fans?). It was so sweet of them. AND SO DELICIOUS. So on Saturday I made some green chile shredded beef and we had tacos. We also went to our (former?) favorite bakery, La Estrella, and they were celebrating something (they had an ofrenda, but it is too early for Dia de los Muertos, so I don't know). The point is, they were selling fresh tamales and tortillas (corn!) so I got some of both. We ate them with the salsa. Divine. I love Mexican food. And I love how easy it is to eat wheat-free with Mexican food.
When I was buying the roast for the shredded beef I also bought some manager's special cube steaks and some loaded mashed potatoes (I was hungry.. many impulse purchases were made). On Sunday, I "marinated" the cube steaks and grilled them on the George Foreman. We ate them with the mashed potatoes, some roasted delicata squash, and some green beans. It was delicious and super easy.
