Tuesday: Easy Coconut Curry (we actually went to Costa Vida after I made this)

Thursday: Leftovers/ Chanda work event
Friday: Date at Union Public House
Saturday: Cafe Zupas
Sugar Spun Run's blog is AMAZING. I made this Buffalo Chicken Mac and Cheese once before and it was a hit. I used rotisserie chicken that I just shredded because I don't like raw meat. :) I considered making it without the chicken, but I think the chicken breaks up the creaminess just enough. We had it with salad and applesauce. (Weird family tradition- I always eat mac and cheese with applesauce, usually I mix it together.)
The coconut curry was good, but it didn't get the recognition it deserved because we ate it only as leftovers and never fresh. E had a rough day and we celebrated with Costa Vida that night even though I had already made the curry. We like to be spontaneous like that.
This was a off week for us in terms of cooking. Sometimes I just don't feel like it. Ha ha.
We did get to eat at Cafe Zupas (our favorite restaurant) so that made up for all of the week's craziness (I worked many many hours).
