E surprised me for my birthday by taking me to DISNEYLAND. It was awesome.

We got home on Tuesday and were absolutely sick of buying food out. So, happy birthday to me, I made some leftover soup and GF potato farls. I did not care for the farls or the soup, but at least they were homemade. Erik made me a funfetti birthday cake (GF Pillsbury brand). It tasted exactly like normal funfetti cake which was a good little treat.

I made enchilada soup on Wednesday for dinner. I had cooked a chicken breast on Tuesday and shredded it up in a pot with a cup or so of chicken broth. To that I added a can of Rotel, a can of stewed tomatoes, and a can of green chilies. I brought that to a boil and then added some cream, chili powder, onion powder, minced garlic, and cayenne pepper. Once that was thoroughly heated I took it off the heat and added shredded cheese and cut up corn tortillas. We put it on some white rice and ate it with sliced avocado, fresh salsa, and olives (on mine). It was perfect for a cold day and the leftovers reheated well for lunch the next day! E liked it even though the chunks of tomatoes were pretty big.
