Monday: Costa Vida
Tuesday: Split Pea Soup
Wednesday: Leftovers
Thursday: Completos


On Monday I worked late so we grabbed a quick dinner at Costa Vida. We love Costa Vida. In fact, I bought E a Costa Vida gift card to put in his stocking for Christmas. The day it was delivered he went to get the mail and right when I remembered it was supposed to come in I yelled "WAIT DON'T LOOK!" and he pulled out TWO gift cards. He got me the exact same thing for my stocking. Ha. That is true love. Merry Christmas to us.

On Tuesday I ended up making the Split Pea Soup. I didn't know that split peas are just peas that are dried. It tasted like that. It was fine. But not awesome. I added some bacon to the crockpot as I cooked the soup, so it wasn't actually vegetarian. It was okay. I don't think I'll be making it again.

Wednesday after work we went shopping for some last minute things (avocados and a gift for my boss). We just ate leftovers.

On Thursday when we got home from work, E and I made completos. I used Udi's GF hot dog buns. They are pretty good, but really thick.
