Monday: Lasagna Soup with Italian Brazil Cheese Bread
Tuesday: German Pancakes
Since E isn't in any classes now he decided to make dinner. He made lasagna soup - it was SO good. We used ground beef instead of sausage and ate it with cottage cheese since we didn't have ricotta. Erik wanted to call it "wet lasagna." We also used beef broth instead of chicken broth.
I really wanted garlic bread to go along with it, but am avoiding gluten, so I made Brazilian Cheese Bread. I used the basic recipe on the link but added in garlic, italian herbs, and used Parmesan and Mozzarella cheeses. I sprinkled them with garlic salt before I put them in the oven. I cooked them for about 12 minutes and they were perfect. A strange texture, but still tasty dipped in the soup.
