Monday: Pizza night with M&M with caprese stuffed avocado
Tuesday: Sopa de lentejas
Wednesday: Leftover lentils
Thursday: Corn dog muffins
Friday: Eat at work (late night)
Our friends invited us over for pizza night. They provided the pizza so we brought the salad. There has been this huge romaine lettuce crisis, so I made a caprese with heirloom tomatoes, fresh mozzarella cheese, fresh basil leaves, and sliced avocado. Then I drizzled it with a balsamic-brown sugar reduction. It was great.
I also made cookies to thank the girl who watched Luna over the weekend, so we had these peanut butter cookies. I made them with the Krusteaz all purpose GF flour blend. Fresh, they were great. I think had there been any leftover they would have been crumbly the next day. They weren't as peanut-buttery as I wanted. Next time I will add extra PB.
On Tuesday, E requested sopa de lentejas so that is what I made. Again, this is the recipe I use. I use kielbasa instead of chorizo. We love it.
Wednesday we had leftover lentils. I prefer heating them on the stove to heating them in the microwave, but that might just be in my head.
Thursday, E cooked because I worked late. He made GF cornbread (from a mix - Simple Truth brand). Then he poured it into muffin cups and put slices of hot dog in the muffin cups. Corn dog muffins. They were exactly what you would expect. Tasted like corn dogs with a lot of bread. They were inspired by the Corn Dog Castle at California Adventure. We miss it.
On Friday I worked late again. Dinner was provided which was nice. E was on his own.
