My mom is the best cook I know. A loooong time ago she assembled this list of her infamous cookie recipes and posted it on FB. I don't have a FB so I am reposting it here for easy access.
Lowercase t is teaspoon, uppercase T is tablespoon. Store all cookies in an airtight container. Ovens need to be preheated.
Extra Rich Sugar Cookies
1 c sugar
1 c butter (real butter)
2 T milk
2 eggs
Cream butter and sugar together until light and fluffy, then add remaining wet ingredients.
In separate bowl mix together:
2 1/2 c flour (be precise)
2 t cream of tartar
1 t baking soda
1/2 t salt
Add dry ingredients to wet ingredients. With flour coated hands, divide dough into two equal parts. Place dough into a sheet of plastic wrap. Chill for at least two hours.
Gently roll dough out to 1/4-1/2" thickiness. Cut with cookie cutters. Keep rest of dough cold.
Bake in a preheated oven at 400* for 5-7 minutes. When done, the cookies will be very light on the top and lightly browned on the bottom. If they get over cooked they will be very hard and crunchy. They are better soft. Don't overcook them.
Boiled Cookies (aka No Bake Cookies)
1/2 c butter
2 c sugar
1/4 c cocoa powder
1/2 c milk (I have successfully used almond milk)
Combine in a large saucepan. Bring to a boil over low heat, stirring constantly. Boil for 2 minutes.
Remove from heat and add:
1/2 c peanut butter (I prefer chunky)
3 c instant/quick cook oats
1 t vanilla
Stir together and drop by spoonful on aluminum foil. Let cool completely.
Big Batch Chocolate Crinkles
These bad boys taste like brownies and are super addictive.
2 c sugar
1 c brown sugar
1 1/2 c butter, softened (not melted)
1/3 c shortening, softened
2 t vanilla
3 eggs
Cream together butter and sugars until light and fluffy. Add vanilla and eggs and mix well.
In a separate bowl mix together:
3 3/4 c flour
2/3 c cocoa powder
2 t baking soda
1 t salt
Add to wet ingredients and mix well. Chill dough for at least an hour (covered), then shape into 1" balls. Roll in sugar and bake in a preheated oven at 350* for 7-10 minutes. They are done baking when they are no longer ball-shaped but still soft in the middle. Don't overcook. Remove from cookie sheet and place on a flat surface to cool. (If they aren't crinkly when you take them out of the oven, as you move them onto a flat surface to cool you can hit the spatula down and they will crack as they slide off.)
Big Batch Peanut Butter Crinkles
These are soft and chewy and perfect.
2 c butter, softened
2 c peanut butter
2 c brown sugar
2 c white sugar
4 eggs
2 t vanilla
Cream together butter, peanut butter, and sugars until light and fluffy. Mix in vanilla and eggs.
In a separate bowl mix together:
5 c flour
3 t baking soda
1 t salt (more if you used unsalted peanut butter)
Add to wet ingredients and mix well. Chill dough for at least an hour (covered), then shape into 1" balls. Roll in sugar and bake in preheated over at 350* for 7-10 minutes. They are done when they are no longer ball shaped but still soft in the middle. Don't overcook them. Remove from cookie sheet and place on a flat surface to cool.
Wyndie's Snickerdoodles
Again, soft and chewy.
1 c butter
2 c white sugar
2 eggs
1 t vanilla
1/4 c milk
Mix together butter and sugar until light and fluffy. Add milk, vanilla, and eggs and mix well.
In a separate bowl mix together:
3 3/4 c flour
1/2 t baking soda
1/2 t cream of tartar (absolutely necessary)
Add to wet ingredients and mix well. Chill dough for at least an hour, then shape into 1" balls. Roll in cinnamon sugar and bake in a preheated oven at 350* for 7-10 minutes. Cookies are done when they are no longer in a ball shape but are still soft in the middle. Place on a flat surface to cool.
Chanda's Oatmeal Chocolate Chip Cookies
A Sunday classic
1 c butter, softened
1/2 c sugar
1 c brown sugar
2 eggs
1 t vanilla
Cream together sugar and butter until light, then add vanilla and eggs.
In a separate bowl mix together:
1 1/2 c flour
1 t salt
1 t baking soda
Add to wet ingredients, mix well then add:
2 c oats
1-2 c chocolate chips
1 c pecans or walnuts if you are into that (I am not)
Scoop out (no need to chill) into 1" balls and bake at a 350* oven for about 8 minutes. They should be soft in the middle.
