Sweet and Sour Cauliflower with Fried Rice

When we want Chinese food but also want to stick to our budget this is what we make.


Fried Rice
1 1/2 cups rice (white or brown), cooked and cooled
1 egg, beaten
1/2 cup mixed vegetables (frozen)
2 tablespoons soy sauce or coconut aminos
1 teaspoon sesame oil
1 tablespoon neutral oil (we use avocado oil)
1 teaspoon ginger powder
2 cloves garlic, minced

Heat up oil and add rice. Allow rice to crisp, stirring only occasionally. Add vegetables, garlic, and ginger powder. Once vegetables are warmed through, create a well in the middle and add the egg. Allow the egg to cook before mixing in with rice. Drizzle with sesame oil and soy sauce.

Cauliflower
1 head cauliflower, cut into small-bite sized florets
1 cup milk
1 cup flour
1 teaspoon chicken bouillon
1 teaspoon garlic powder

Preheat oven to 425*.
Mix milk, flour, chicken bouillon, and garlic powder in a large bowl. Add cauliflower florets and mix thoroughly. Place florets on a greased cookie sheet after allowing batter to drip off. Bake for 15 minutes, stir, and bake for another 15 minutes.

(You can also make just the cauliflower and eat with buffalo ranch dip!)
