1 lb 15 Bean Soup Mix (I used HamBeens)
4 cups water
4 cups of vegetable broth (bone broth if you aren't worried about being vegetarian)
3 carrots, peeled and diced
1 bell pepper, diced
2 stalks celery, diced
1 small onion, diced
2 tablespoons minced garlic
2 tablespoons of no-salt seasoning (I used Trader Joe's 21 Seasoning Salute)
Olive oil
Instant Pot recipe: Saute the onion, bell pepper, and garlic in about a tablespoon of olive oil until soft. Add the rest of the ingredients and cook on high pressure for 25 minutes, allow pressure to release naturally.
[Without an instant pot or pressure cooker, after sautéing onion, bell pepper, and garlic add the rest of the ingredients and bring to a boil. Lower temperature and simmer for 1 1/2 hours or until the largest beans are soft.]
Add salt and pepper to taste and enjoy.
