What to do with white beans? This white chili is simple and pretty fast. You can always substitute the dry beans for canned to make a quick meal (especially if you don't have a pressure cooker).
White Beans:
1/2 lb white beans, sorted and rinsed
4 cups water
1 bay leaf
2 teaspoons dried oregano
1 tablespoon Trader Joe's 21 Seasoning Salute (or other salt-free seasoning blend)
Add all ingredients to your Instant Pot and cook on high pressure for 30 minutes. Allow for automatic steam release.
Chili:
1 large sweet potato, peeled and cubed
2 cups bone broth
1 cup cream or whole milk
1 can diced green chilies
1 teaspoon ground nutmeg
2 teaspoons dried oregano
8 oz queso fresco, cubed
White beans (from above, or 2 cans low-sodium)
Mix sweet potato, broth, nutmeg, oregano, and salt/pepper to taste in a large stock pot. Bring to a boil then lower to a simmer until you can put a fork through the sweet potato cubes. Add beans, green chilies, and cream and reduce heat to low until everything is heated through. Top with cubes of queso fresco to serve.
