African Lentil Stew

This is one of our end-of-the-month meals (aka the budget is out!). This isn't pretty, but it is delicious. One pot, spicy, good for you, filling, are you sold yet?



2 T olive oil
1 c dried brown lentils, rinsed and sorted
1 medium sweet potato, peeled and diced
2 carrots, peeled and diced
1 small onion, diced
4 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1.5 T harissa paste (found at Trader Joe's!)
4 c broth (chicken or vegetable)
1 c frozen kale
1 t turmeric powder
1/2 t coriander powder
1/2 t ginger powder
1 bay leaf, dried
Salt and pepper, to taste

Saute onion, garlic, carrot, and sweet potato in olive oil until fragrant (about 3 minutes). Add the rest of the ingredients, bring to a boil, reduce to simmer for about 25 minutes or until carrots, lentils, and sweet potato are soft.
