Delicious way to eat zucchini or Mexican gray squash.
1-2 large squash (zucchini, yellow squash, or Mexican gray squash), sliced lengthwise into eighths
Mix:
1/2 cup breadcrumbs
1/4 cup parmesan cheese
1 teaspoon each garlic powder, onion powder
Salt and pepper to taste
In separate bowl, mix:
1 egg
1/2 cup milk
Dredge the squash sticks first in the egg and milk mixture and then in the breadcrumb mixture. Lay on an oiled sheet pan and bake for 20 minutes at 400*F, flipping halfway through.
Serve with marinara or ranch.
